Orange and Walnut Adzuki Truffles

Many of us believe that we are buying ‘healthy’ snacks from the plethora of fruit and nut bars now available in shops.  What I would suggest to all of you is that you start to read the labels.  Many of these so called health bars have two or more sugars added to them.  Disguised as maltose, fructose, etc., etc., it truly is best to make your own snacks at home. My delicious Orange and Walnut Adzuki Truffles are a hit with all of my students.

Not only will this save you money but you will be in charge of ingredients and not paying some mad scientist who is concocting these recipes in a laboratory.  The truffles in this post are so easy to make.  Enjoy.

1 cup cooked azduki beans
1 heaped tbsp hazelnut butter
2 tbsp rice syrup
½ tsp vanilla essence
Zest of 1 orange
Ground walnuts
Grain based chocolate chips

Blend the adzuki beans, hazelnut butter, rice syrup and vanilla either by hand or using a hand blender. Place the mixture in a bowl and add enough ground walnuts to form dough that sticks and binds together. Stir in the orange zest. Roll into small truffle sized balls.

Add a coating of your choice – Melted Grain Base chocolate chips, desiccated coconut, cocoa powder, sesame seeds or finely chopped dried fruit & nut mixture. Chill in the refrigerator.
